What If I Don’t Use Semi-Sweet Chocolate Chips?

Instead of semi-sweet chocolate chips, you could use dark chocolate chips for less sweetness, milk chocolate chips for more sweetness, or white chocolate chips for a whole different flavor.

What Other Flavors Could I Try?

  • Add different types of chocolate chips into the cookie dough for a fun twist on these. White chocolate chips pair so well with the peppermint flavors.
  • For an even stronger peppermint flavor, add a little peppermint extract to the cookie dough.

The key is to always use top-quality ingredients as they'll result in a better cookie; it really is that simple.
  1. Always use butter.
  2. Choose the right sugar.
  3. Choose the right flour.
  4. Check your flour is in date.
  5. Choose the right kind of chocolate.
  6. Cream the butter and sugar.
  7. Beat in the eggs.
  8. Fold in the flour.

What is the secret to making cookies soft and chewy? ›

Cornstarch helps product soft and thick cookies. Using more brown sugar than white sugar results in a moister, softer cookie. An extra egg yolk increases chewiness. Rolling the cookie dough balls to be tall and lumpy instead of wide and smooth gives the cookies a bakery-style textured thickness.

What is the secret ingredient to keep cookies soft? ›

Corn Syrup (Light)

Light corn syrup is something you can add to any cookie mix to help achieve softness. This isn't the type of corn syrup regularly sold in various stores, but more of a sugar that verges on liquid, helping the other sugars in the mix to remain more liquid-like when baked.

Do you flatten cookie dough before baking? ›

If the dough is chilled before baking then the cookies will be slightly more rounded, so if you want slightly flatter cookies then bake them as soon as you have mixed up the dough. But we would not recommend flattening the cookies completely as this will affect the texture.

What gives cookies more flavor? ›

Add more complex proteins, like malted milk powder and brown butter. Caramelizing the sugar beforehand brings bright notes to your cookies, but you can further expand your dessert's flavor profile by playing with proteins.

Should I use baking soda or baking powder in cookies? ›

Baking soda is typically used for chewy cookies, while baking powder is generally used for light and airy cookies. Since baking powder is comprised of a number of ingredients (baking soda, cream of tartar, cornstarch, etc.), using it instead of pure baking soda will affect the taste of your cookies.

How do I make my cookies chewy instead of crunchy? ›

Double Your Yolks Most cookie recipes call for at least one egg. You can try omitting the white of each egg, which tends to dry out when baked, and replacing it with an additional yolk. Plus, egg yolks have more fat than egg whites, which helps to keep your cookies moist and chewy.

Why put corn syrup in cookies? ›

So, when you mix corn syrup into your cookie batter, all of that moisture will make and keep your baked cookies deliciously tender. The texture of cookies benefits from corn syrup as well. As you combine your ingredients to make your cookie batter, corn syrup will pull some of the surrounding air into your batter.

How do you make cookies firmer? ›

Extended Baking Time: One way to achieve a crunchier texture is to bake the cookies for a longer period of time than the original recipe suggests. Keep a close eye on them to prevent burning, but allow them to bake until they turn golden brown around the edges.

What ingredient makes cookies harder? ›

Baking powder

Baking powder contains sodium bicarbonate and acidic salts. The reaction of these two ingredients results in a cookie that is soft and thick, but slightly harder.

What does brown sugar do for cookies? ›

Brown sugar, meanwhile, is dense and compacts easily, creating fewer air pockets during creaming—that means that there's less opportunity to entrap gas, creating cookies that rise less and spread more. With less moisture escaping via steam, they also stay moist and chewy.

What happens if you put too much butter in chocolate chip cookies? ›

Too much butter makes cookies turn out just as you'd expect: very buttery. This batch of cookies was cakey in the middle, but also airy throughout, with crispy edges.

Which chocolate chips melt best in cookies? ›

When you find a recipe that calls for melted chocolate chips, reach for Ghirardelli Semi-Sweet Chocolate Chips. Our Test Kitchen team found that these chips melted down very easily and had a super creamy texture.

What makes a cookie the best? ›

The best cookies have layers of texture. A slightly crisp outer shell that holds up to some heat with an inner core that's soft and chewy. Premium cookies taste great at room temperature, straight out of the fridge or slightly heated. Creating cookies in small batches is key.

What is the most important thing in cookies? ›

Fat is a very important ingredient in cookies – it tenderizes, crisps and browns, adds color and a wonderful flavor that is impossible to duplicate. Butter, our fat of choice, ensures good baking results and adds the most desirable taste, texture and appearance.
